CARROT CAKE

INGREDIENTS

  • 0.125      ALMOND FLOUR
  • 0.015      COCONUT FLOUR.
  • 0.0025   BAKING SODA.
  • 0.0075   CINNOMAN POWDER
  • 0.005     GINGER POWDER.
  • 0.075     COCONUT OIL.
  • 0.1          HONEY
  • 1/8.        VANILLA
  • 0.05.      GRATED CARROTS.
  • 2.            EGGS
  • ICING :
  • 0.1          COCONUT CREAM.
  • 0.01.      MAPLE SYRUP

 

Step 1: Combine all the dry ingredients , whisk together to incorporate the bicarbonate

Step 2: whisk all the wet ingredients together , add these to the dry ingredients , fold in until just well combined.

Step 3: pour into desired moulds , bake @ 160*C for 15 minutes

Step 4: while baking make a syrup out of the following:

  • 150ml natural honey
  • 150ml freshly squeezed orange juice

***bring the syrup to the boil & set aside .

Step 5: as soon as the carrot cakes are ready , remove from the oven , insert holes into the cake using a wooden skewer..

Step 6: pour the hot syrup over the cakes evenly & allow the cakes to absorb the syrup.

Step 7: once completely cooled , ice using the whipped vanilla crema!

Step 8: ENJOY!!!
